Winemaking Some vineyards were harvested by machine during cool (often cold) night-time conditions and others by hand during the day. The grapes were lightly pressed to yield a modest volume of high-quality juice, which was then cold-settled prior to racking into French oak barriques, a small percentage of which were new. The juice was allowed to undergo spontaneous indigenous yeast fermentation, the tail end of which continued for well over six months. The wine had occasional lees stirring and approximately two-thirds underwent malolactic fermentation. It was transferred out of oak prior to the following harvest and left on yeast lees for a further six months. The wine was bottled in September 2025, with alcohol 14.0%, pH 3.22 and acidity 6.0 g/l.

The Character

Tasting Notes An aromatic medley combining fresh peach, elderflower and lemon oil with richer layers of dried mango, honeycomb and shortcrust pastry. The palate is bright and lively with tropical notes of green papaya and cantaloupe mingling with preserved citrus, pink peppercorns and a salty hint of oyster shell. A hands-o interpretation of Marlborough sauvignon blanc – an untamed, unique expression, featuring a generously textured long finish.

The Story

Fermented in old oak barrels using wild yeast, this is a 'wild child' Sauvignon offering complexity and texture. The lushness of crème brûlée infused with toasted sesame and thyme and a persistent chalky finish.
