Winemaking Old Burgundian style - "Black Chardonnay." A revival of an old technique where Chardonnay juice is intentionally hyper-oxidized by aggressive pressing and aeration, turning it dark brown or black before fermentation, only for it to clarify into a golden, complex wine with enhanced aging potential and unique texture, contrasting with modern gentle methods. This process removes unstable phenolic compounds, preventing future browning and creating a wine that is often vibrant, layered, and surprisingly fresh despite its oxidative start. Benefits are that it stabilizes the wine for long aging, preventing premature oxidation (premox).

The Story

I've always felt a profound affinity for Chardonnay, ever since visiting Burgundy as a young kid. In fact, this region was one of the most influential places for me during my childhood. It’s where I had my first taste of wine and where I was first introduced to the intricate relationship between wine and the food and culture of a region. I was captivated by the discovery of terroir – how a place could influence the style and flavor of the wine, and how the same grape from the same vintage could be so vastly different from one village or vineyard to the next.
Years ago, when my father was doing a book on Domaine Serene in Oregon, I visited the region with him multiple times and quickly fell in love with the area’s unique terroir. During the time when The Setting Inn was getting ready to open in Oregon, Erin Brooks introduced me to a brand called 00, and I was charmed by the beautiful fruit they sourced for their wines, including from Chehalem Mountain Vineyard. Given my enduring love for Chardonnay, and my experience making Burgundian varietal wines throughout California, developing a Chardonnay for The Setting Wines seemed like a natural next step. - Jesse Katz -

The historic Chehalem Mountain Vineyard was planted in 1968 by Dick Erath, who founded Erath Winery in the Dundee Hills, and was an early Oregon Pinot Noir grower. The Chehalem Mountains AVA is a single uplifted landmass southwest of Portland in the northern Willamette Valley, stretching from southeast to northwest. It is the geography and climate that differentiate this AVA from others. The important hillside soil types are represented; basaltic, ocean sedimentary and loess (blown lake bed sediment), the latter of which is the predominant soil on the northern face of the Chehalem Mountains.

Established in 2014, The Setting is a collection of luxury wines created by three friends: Jeff Cova, Noah McMahon and winemaker Jesse Katz. Jesse’s experience spans 19 harvests at internationally acclaimed wineries such as Chateau Petrus, Robert Foley, and was a part of the winemaking team at Screaming Eagle. The Setting Wines is a culmination of relationships spanning decades from Napa to Sonoma County to Willamette Valley, sourcing from some of the most prestigious vineyards the regions have to offer.
Recently, Jesse was named Wine Enthusiast’s Global Winemaker of the Year for 2025.
