Winemaking Arturo's and Vitruvian vineyards, established in 1974 and 2019 respectively, are situated at an elevation of 80 meters with a southeast and west orientation on a sloped terrain. The soil is Bokkeveld Shale, which is conducive to the maritime, cool, and windy climate of the region. The grapes are hand-harvested and destemmed at the cellar before being placed in open fermenters. Fermentation begins with nonSaccharomyces yeast and is inoculated after a few days of soaking. The cap is punched down three times daily, and the grapes are pressed nearly dry before transferring to a tank for malolactic fermentation.
