Winemaking All of the fruit was destemmed and not crushed. Native yeast ferment in wooden and stainless steel vats without temperature control. There were no punch-downs or pump-overs and no additions. The must was pressed after 3 weeks and then aged in stainless steel. A small SO2 addition was made and the wine filtered just prior to bottling.

The Story

William Downie is a legend in site-specific Australian pinot noir; his Cathedral bottling is his multi-vineyard blend, where he combines the best elements from sites across eastern Victoria. In the 2025 vintages, this is 70% King Valley fruit, 20% from the Yarra Valley, and 10% Upper Goulburn. The King Valley fruit is grown by the Michelini Family at Edi Upper; this parcel of MV6 pinot noir sits on old volcanic soils at 300m elevation.
In Upper Goulburn, Little Cathedral Farm sits at 350m elevation at the foot of the Cathedral range. The vines
are planted in 1998 on 400 million-year-old sandstone and shale. The Yarra Valley fruit is from the ‘Hill’ block at Thousand Candles in Gruyere. This is one of the best sites for pinot noir in the Yarra Valley managed by one of the best growers, Stuart Proud. This east facing block was planted in 1998 and sits at about 100m above sea level.
