Winemaking All the separate Pinot noir lots were fermented either spontaneously or via a pied de cuve (vineyard native yeast cultivation) build up. We utilized varying techniques, including a significant portions of whole cluster in some of the Cassin lots, but with the softer acids this vintage, our favored technique this year was to destem more of the Pinot Noir in order to preserve acidity, as whole cluster ferments tend to lose acidity with due to higher potassium levels. Our main objective is diversify the styles and texture of the wines in order to provide more complexity, nuance and nerve in the wine. We belive our choices will favor our goals to retain more savoryness and Old World rusticity in the

The Character

Overall A balanced and nuanced Pinot noir
Aromas Savory and significant, while ethereal at the same time
Tasting Notes What a lovely vintage 2023 turned out to be and our first vintage in many years that danced on the historic growing norms. This year’s Pinot Noir “Un” is all classic Pinot - red fruited and a dense mineral undertone on the nose of the wine is followed on the palate with ripe strawberry, cherry compote and an earthy forest floor savory character. This wine is true classic and over delivers for a base-level Pinot. Drink up now or wait a few months, years, etc., this wine has plenty of life to give!
