Then, a static must settling at cold temperature during 24 to 48 hours. Spontaneously fermented (indigenous yeasts) in stainless steel tank under temperature controlled. Malolactic done.

Situated in the department of Yonne, the Chablis vineyard spreads along the Serein River. The Climats are spread between the right and left banks. The Descombe family has 21 different plots, each ones vinified separately to show their true identify and characteristics.
