Winemaking Harvested by hand in three lots on the 6th, 7th and 8th of August. Manual sorting proceeded a gentle press (looking for light extraction) and fermentation in stainless steel tanks. After fermentation, the wine was left in the tanks for an additional 3 months and then bottled with minimal filtration. Sulfites: 35 ppm

Aging Stainless steel for 3 months.

Balance is its guiding principle, steering clear of the overt herbaceousness often found in California examples and the exuberant passion fruit and kiwi character typical of New Zealand styles. Instead, it draws inspiration from the more restrained French expression, offering notes of lime zest and grapefruit layered with subtle jalapeño, slate, and white peach. Immediately appealing yet quietly complex, it is a pleasure to enjoy now, with the promise of even greater harmony after a year of bottle age.

A beautiful varietal Sauvignon Blanc from the high elevation organically farmed estate vineyards of Tres Raices, that showcases well the precision and grace this estate is founded on. Splitting the difference between fresh cut lawn and the tropical notes so common to wines from this region, it's shows at once restraint in the vineyards and the potential of the climate - yielding ripe fruit that manages to hold on to plenty of acidity.

in honor of their three children. The name Tres Raices translates to "three roots" in English and is a reference to their sons. They are the leader in red wines from this region, but are also the champions of method champenoise made from 100% Pinot Noir!
