Winemaking Harvest was on August 12th and 13th for all three vineyards. The wine was destemmed by hand and then pressed in their wonderful old but challenging basket press, before being racked off the gross lees and fermented in stainless steel tanks for 15 days. No malolactic. After fermentation the wine was racked and aged in stainless steel for 2 months. Sulfites: 29 ppm
Aging Aged in stainless steel tanks for 2 months before bottling.

Overall Medium to light bodied and deeply expressive
Aromas Citrus and tropical fruits. Fresh cut grass and exceptional minerality.
Mouthfeel Bright, high acidity, medium to light bodied.
Tasting Notes My goodness this is fantastic. Following the arc that is approaching closer and closer to the heavens, this vintage of Mina Penelope's Sauvignon Blanc is even better than the previous, with greater overall expression and slightly more taught acidity. It's drinking like a song on release but everything in this wine says it will age very nicely for 7 years or more. Don't hesitate to get enough bottles to have the chance to witness how it ages.

From estate grown organically farmed fruit, made in incredibly small batches and with the greatest of care at the hands of a master farmer and maser winemaker, this wine is a wonder to behold. Perfect balance of ripeness of fruit and breathtaking acidity, with no shortcuts. Natural wine made perfectly.
