Winemaking Grapes are handpicked in late October and November once the sugar content at its prime and grapes shrivel. There is no noble rot influence in this wine. Fermentation is stopped by adding grape spirit, which raises the Abv % and leaves unfermented residual sugar in the wine.

The Story

Javier Ochoa first planted Muscat a Petit Grain in Navarra as a personal study for EVENA, the wine research department of Navarra. With 0 humidity, the grapes are able to hang on the vine until no moisture is left, just raisins on the vine. These are then harvested and then pressed to create a dessert wine like no other.
