Winemaking Harvest occurred on the 19th and 25th of August in small baskets to prevent bruising and in the early morning to preserve freshness. Once at the winery, the grapes were whole cluster pressed and fermented at low temperatures in open top stainless steel tanks for 20 days. After fermentation was complete the wine was racked off the lees and left to rest in stainless steel tanks for 6 months before bottling. Sulfites: 25 ppm

Overall Fresh and approachable white with bright acidity.
Aromas citrus notes of lemon and lemongrass, grapefruit, white peach, fresh cut lawn and honeydew melon

Tasting Notes The 2024 is a brilliantly crisp vintage for this white from the biodynamic organic Carrodilla winery. In this vintage, ample sunlight and a balanced growing season combined with a winter that was sufficiently cold and wet to keep the vines dormant until the early spring to create a wine with elegance and vigor beyond its pedigree. Lighter on the tropical notes found in many of the Sauvignon Blancs from this region, here one finds more the high citrus notes of lemon and lemongrass layered in with grapefruit, white peach, fresh cut lawn and honeydew melon. This is delicious right out of the gate but will age nicely for 4 to 5 years.

The Story
The starting point of the white wines from the organic and biodynamic Carrodilla estate, this is intended to be a crisp and naked expression of the fruit and the land it comes from. Fermented and aged in stainless steel, this is an excellent food wine that pairs well with everting from salads, to fish and seafood, as well as spicy mexican plates where you would squeeze a lime on it for finishing. A biodynamic estate by ethos, the labels all have cosmic references, and in this case the name translates to "to go and to come" referring to the cyclical nature of all this suspended on the endless pendulum of time.
